Help Celebrate the 2005 Great American Seafood Cook-Off

Fish for the Future FoundationŠ, supported by the National Marine Fisheries Service, is preparing a Seafood Cookbook. The cookbook will contain recipes from 20 leading U.S. chefs competing in the Great American Seafood Cook-off on August 8, 2005, in New Orleans, Louisiana.
But how can a seafood cookbook be complete without recipes from the American public, the owners of the resource? We need your recipes to help us show, "any way you cook it, there is nothing like American Seafood."
With more than 300 species of finfish and shellfish from fresh inland streams to 200 miles off our shores, no wonder seafood is so popular with millions of Americans. Since the founding of this Nation, seafood has been an important source of protein. Today seafood is also a healthy source of protein. The medical community tells us by eating at least two servings of seafood each week, we protect our heart against disease, help protect against other diseases such as cancer and arthritis, alleviates symptoms of depression and other mental health, and plays an important role in the development of our brain and eyes. In short, seafood is an essential part for a healthy diet.
Today we celebrate not only the importance of seafood but the strives we have made in its management. Partnerships with the federal government, the regional fishery management councils, and the states along with the commercial and recreational fishing groups as well as conservation organizations have improved fisheries in U.S. waters. Our stocks are being rebuilt; overfishing practices are stopping; our fisheries are improving.
So join us in celebrating American Seafood by submitting your favorite recipe(s) to:
